Sweet 'n' Creamy Apple Quesadillas |
Ingredients

* 2 (10 in) tortillas, whole wheat preferable
* 4 tbsp cinnamon and brown sugar cream cheese, softened
* 1 apple, cored, peeled and sliced thin

Directions

1. Lay both of the tortillas on a flat surface.
2. Spread 2 tbsp of the cream cheese over the tortillas.
3. Lay apple slices on one half of each tortilla.
4. Fold the other side of the tortillas over the apples.
5. Slice each tortilla into 4 triangles.
6. Microwave the triangles on high for 30 seconds or until warmed through.
7. You may also heat them in a large skillet over low heat, checking to be sure not to scorch the tortillas. Spray the skillet with a little non-stick cooking spray, heat, and turn with spatula when warmed through.

I'm not sure this qualifies for lunch, but if you have kids that are a bit finicky, they sure won't pass up these quesadillas! Just the aroma alone will have them asking for seconds... and that's before they've even had the first one!
