Sweet Cinnamon Yam Bake

* 2 (15 3/4 oz.) cans of yams, drained
* 1 egg
* 1/2 C butter, melted, divided
* 1/2 C sugar
* 1/2 tsp ground cinnamon
* 1/8 tsp salt
* 1 C butter flavored crackers, like Ritz, crushed
* 1/2 C packed brown sugar

1. In a large mixing bowl mash the yams well with a fork.
2. Add the egg to the yams.
3. Pour 1/4 C of the butter over the top of the yams and eggs.
4. Add in the sugar, cinnamon and salt.
5. Mix the ingredients together well.
6. Generously coat a square baking pan with cooking spray.
7. Place the yam mixture into the prepared pan.
8. Toss together the crackers and brown sugar in a small mixing bowl.
9. Slowly add the remaining butter and toss until all the crackers are covered.
10. Spread the cracker mixture over the top of the casserole.
11. Bake in a preheated 350 degree oven for 30 minutes or until golden brown.

You see a sale on, of all things, canned yams. Okay, what do you do with canned yams? It's hard to pass up such a savings, and your kids like sweet potatoes, so will this be a good idea?

Yes. Canned yams are similar in flavor to sweet potatoes and they can be a real deal, simply because not many people know what to make with them! This is a pretty simple dish that is both inexpensive and delicious. Of course, kids will love it, but the grown ups will, too. You don't have to save this recipe for a holiday meal, but it is pretty festive, so you may want to serve it on a special occasion.
