*3 tbsp vegetable oil
*2/3 C of cooked sweet potatoes, mashed
*2/3 C of apples, cored and chopped
*3 3/4 C of bread flour
*1/4 C dry milk
*3 tbsp sugar
*1 1/2 tsp salt
*1 tsp cinnamon
*1/2 tsp nutmeg
*1 1/4 tsp of yeast
*1/2 C of pecans, chopped
*1/3 C of raisins

What a great way to use up sweet potatoes! We often bake up a half dozen sweet potatoes at a time (why waste oven heat). Then, we scoop out the insides, eat some for dinner that night with salt, pepper, and butter, and save the rest in containers. I freeze some and keep some refrigerated for later in the week. At least one of those containers gets turned into bread. This is a fun recipe that is more like a dessert than a bread.
