* 2 small cucumbers, peeled, cut in half lengthwise, seeded and cut into slices
* 3 TBSP red wine vinegar
* 2 packets of sugar substitute
* 1/2 tsp salt
* 2 tomatoes, chopped
* 1/2 C scallions, chopped
* 2 TBSP olive oil
* 1/4 tsp pepper
Directions
1. Place the cucumbers into a large mixing bowl.
2. In a separate bowl whisk together the vinegar, sugar substitute and salt.
3. Pour the vinegar mixture over the cucumbers and toss to coat well.
4. Cover the bowl and allow the cucumbers to marinate for 1 hour.
5. Fold in the tomatoes and scallions.
6. Stir in the olive oil until blended in well.
7. Sprinkle in the pepper and gently mix to combine.
8. Refrigerate at least 30 minutes before serving.
