Tangy Lentil Salad

Ingredients

* 12 oz package of dried lentils
* 1 medium onion, diced
* 3 garlic cloves, minced
* 4 cups water
* 1 tablespoon dried parsley
* 1 teaspoon dried oregano
* 1 teaspoon dried basil

* 1/4 cup red wine vinegar
* 1/2 cup extra virgin olive oil
* 1 teaspoon salt

Directions

1. Place first seven ingredients in saucepan. Bring to a boil. Bring heat down and simmer for 30 minutes, stirring occasionally.
2. Transfer to serving bowl and let cool for 30 minutes.
3. In separate bowl, mix remaining ingredients then toss with cooled lentil mixture.
4. Cover and refrigerate for 1-2 hours and serve.

Story

If you're trying to add more healthy forms of protein to your diet, lentils are a great choice. However, if you're like me, you get tired of eating lentil soup. This salad is a wonderful way to eat lentils without getting bored with your choices. I love the tangy red wine vinegar dressing.

You may also want to dice up some fresh celery and onion and toss with your lentil salad before serving for a little extra crunch.
