Three Bean Barbecue Bake |
Ingredients

* 1/2 C barbecue sauce
* 1 tsp yellow mustard
* 1 (28 oz.) can pork and beans
* 1 (15 oz.) can garbanzo beans, drained and rinsed
* 1 (15 oz.) can kidney beans, drained and rinsed
* 1 (4 oz.) pkg. Cheddar cheese, shredded
* 1 (10 oz.) can buttermilk biscuits
* 2 tbsp cornmeal

Directions

1. Preheat oven to 350 degrees.
2. Spray large casserole dish with non stick cooking oil.
3. In a large saucepan over medium high heat put the barbecue sauce, mustard, pork and beans including their juice, garbanzo beans, and kidney beans and mix well.
4. Gently fold in the cheese.
5. Bring the mixture to a rapid boil and then remove from the heat.
6. Spread the bean mixture into the prepared casserole dish.
7. Separate the biscuits and cut each biscuit into 4 pieces.
8. Sprinkle the cornmeal over the biscuit pieces, coating evenly.
9. Arrange the biscuit pieces evenly on top of the bean mixture in casserole.
10. Bake uncovered 25 to 30 minutes or until the top of the biscuit pieces are golden brown.

Just a plain old can of pork-n-beans isn't ever enough... you've got to build a casserole around them! Throw in more beans and Cheddar cheese, and then top the whole works with buttermilk biscuits, and no one will walk away from the table hungry.
