Too Cool Nutty Cabbage and Beet Salad |
Ingredients

* Lettuce leaves
* 4 tbsp grated Brazil nuts
* 4 tbsp chopped dates
* 2 tomatoes, sliced
* 2 carrots, grated
* 2 raw beetroots, grated
* 12 oz grated cabbage
* 1/2 cucumber, sliced
* Vinaigrette dressing

Directions
|
1. Lay the lettuce leaves on a plate.
2. Toss together the nuts and dates and sprinkle over the lettuce leaves.
3. Arrange the tomatoes over the lettuce.
4. Sprinkle with the grated carrots, beetroots and cabbage.
5. Layer the cucumber slices over the top.
6. Drizzle with the vinaigrette dressing using just enough to moisten the salad.

This is one salad that is very kid-friendly, and they won't even know how good it is for them. The nuts and dates add enough sweetness to attract even the youngest one's tastebuds! It was difficult at first to add the beets, but once you taste them with the vinaigrette dressing on top, you'll never want to omit them.
