Traditional Pork Roast with Vegetables - Crock Pot |
Ingredients

* 3 lb boneless pork roast
* 1 envelope dry onion soup mix
* 1 cup water
* 10-12 red potatoes, cut into thirds
* 6 carrots, cut into 1" chunks

Directions

1. Coat crock pot with pam cooking spray. Place potatoes and carrots in bottom of crock pot. Put roast on top of vegetables.
2. Mix soup mix with water then pour into crock pot.
3. Cook, covered, on low 9-11 hours.

Story

Making a traditional pork roast with vegetables wasn't always easy for me. I dreaded roasting it in the oven because it would dry out. Cooking it on top of the stove meant watching it all day. This crock pot version is easy and tasty. Finally, we can enjoy a pot roast again!
