Tropical Fruit & Coconut Salad |
Ingredients

* 1 cup sour cream
* 1 cup canned pineapple tidbits, drained
* 1 cup canned mandarin oranges, drained
* 1 cup shredded coconut
* 1 cup mini marshmallows

Directions

1. Combine first 4 ingredients in serving bowl, mixing gently but thoroughly.
2. Gently fold in marshmallows and serve immediately.

It's a toss-up whether to call this a salad or a dessert. It's certainly sweet enough for dessert but it looks like a fruit salad. Either way, your kids will love it!
Toast the coconut a bit if you want to add a little more color and flavor. Just toss the coconut into a dry (no oil) skillet on the stove over medium heat. Give the skillet a few shakes and remove when the coconut just starts to show signs of browning around the edges. Cool thoroughly before adding to the salad.
