Tuna with Cannellini & Green Bean Super Salad |
Ingredients

*8 oz. fresh green beans, washed and cut into 1 inch pieces
*1/3 cup any oil & vinegar salad dressing
*1 tsp Dijon mustard
*1 (15 oz.) can cannellini beans, rinsed and drained well
*3 cups of mixed salad greens
*2 (6 oz.) cans of solid white tuna in water, drained and flaked
*1/2 cup red radishes, sliced
*1/3 cup of pitted Kalamata olives
*3 eggs, hard boiled, peeled and cut into wedges
*Pepper to taste

Directions

1. Cook beans in boiling water for 5 minutes or until crisp tender, drain.
2. Whisk together the oil & vinegar salad dressing and Dijon mustard.
3. Put green beans in a bowl and drizzle on 1/3 of the salad dressing and toss.
4. Put cannellini beans in a bowl and drizzle on 1/3 of the salad dressing and toss.
5. Make salads on cold plates by putting lettuce, then green beans, cannellini beans, tuna, radishes, olives, then eggs on top.
6. Drizzle with remaining dressing and season with black pepper if desired.

This is a salad for those husbands out there that claim a salad isn't enough for dinner. There's no way he can leave the table hungry! Okay, you may want to add some rolls or bread... and maybe dessert, but he'll be just fine. Enjoy!
