Turkey Breast En Casserole |
Ingredients

* 2 tbsp of olive oil
* 1 tbsp butter
* 4 turkey breast fillets
* 1 tsp salt
* 1/2 tsp pepper
* 2 onions, sliced thin
* 2 carrots, sliced thin
* 2 C of chicken broth

Directions

1. Preheat the oven to 350 degrees.
2. Heat the oil and butter in a skillet over medium heat until the butter has melted.
3. Add the turkey and sprinkle evenly with the salt and pepper. Cook, turning occasionally, for 10 minutes or until lightly browned.
4. Place the browned turkey fillets in a casserole dish. Scatter the vegetables around and over the turkey fillets. Pour the broth over the top.
5. Cover the dish and bake 40 minutes or until the vegetables are fork tender. Makes 8 servings.

This is a super simple, but delicious, way to make turkey breasts. They stay nice and tender and juicy baked in the oven with the veggies and broth.
You can also freeze this dish for up to 3 months. Just be sure to let the casserole cool completely, then either cover casserole tightly with tin foil, or remove turkey breasts and sauce from dish and put in freezer containers.
To serve, defrost in the refrigerator overnight. Then heat in covered casserole at 325 degrees for 10 to 15 minutes or until heated through.
