Turkey Salad with Strawberry Vinaigrette |

Ingredients
|
*8 C of salad greens
*2 1/2 C cooked turkey, cut into cubes
*2 C of kiwi, peeled and sliced
*1 C of cherry tomatoes
*1/2 C toasted almonds, sliced
*1 C fresh strawberries, chopped coarsely
*2 TBSP red wine vinegar
*1/8 tsp pepper

Directions

1.Place the salad greens, turkey, kiwi, tomatoes and almonds into a bowl and toss gently.
2.Blend together the strawberries, vinegar and pepper.
3.Pour the dressing over the salad and toss to coat well.

Any excuse to pick strawberries! Even if you don't have strawberry fields where you are, this recipe calls for a trip to the store. Tart red wine vinegar and sweet strawberries are a wonderful combination over a bed of fresh salad greens. The turkey just rounds out the meal. Enjoy!
