Turkey Vegetable Skillet |
Ingredients
|
* 2 tablespoons olive oil
* 2 garlic cloves, minced
* 1 medium zucchini, cut into 1/2" chunks
* 2 medium tomatoes, seeded and cut into 1/2" chunks
* 1 tablespoon dried basil
* 2 tablespoons vinegar
* 1/4 teaspoon black pepper
* 1 1/2 lbs leftover turkey or chicken
* serve over hot cooked rice

Directions

1. Saute garlic in hot oil over low heat until just fragrant.
2. Turn skillet heat up to medium high and immediately add veggies and spices to skillet and cook, stirring frequently, about 5 minutes.
3. Add turkey and toss together until heated through.
Serve over rice.
