Two-Potato Parmesan Wedges |
Ingredients

* 1 Tbsp olive oil
* 1/4 tsp pepper
* 1 Tbsp Parmesan cheese
* 2 white potatoes cut in wedges
* 2 sweet potatoes cut in wedges
* 2 cloves of garlic, minced

Directions

1. Set the oven temperature at 425 degrees.
2. Spray a baking sheet thoroughly with a non stick cooking spray.
3. Place the olive oil, pepper and Parmesan cheese into a heavy duty plastic bag.
4. Seal the bag and shake to incorporate the ingredients together.
5. Add both types of potatoes to bag.
6. Reseal and shake to coat the potatoes thoroughly with the mixture.
7. Remove the potatoes and place them in a single layer on the prepared sheet.
8. Sprinkle the garlic over the top of all the potatoes evenly.
9. Bake 25 minutes then turn the potatoes over.
10. Bake an additional 15 minutes or until the potatoes are a crispy golden brown.

There's a lot of garlic on these oven baked potato wedges, so get ready for a taste explosion! My family loves any kind of potato wedges, so when we used sweet potatoes in this recipe, they were quite pleased. It's always fun to try a new twist on old favorites.
