Veal Stew - Crock Pot |
Ingredients

* 2 - 2 1/2 lbs veal for stew, cut into 1" cubes
* black pepper
* 2 tablespoons olive oil
* 1 bag (16 ounces) fresh whole baby carrots
* 1 large onion, chopped
* 5 cloves garlic, minced
* 1/4 cup all-purpose flour
* 2 cups chicken broth
* 1/2 teaspoon dried rosemary leaves, crushed
* 1 can (14 1/2 ounces) diced tomatoes
* 1 cup frozen peas
* hot cooked rice

Directions

1. Sprinkle pepper on veal to taste. Brown veal in hot oil in a large skillet.
2. Put browned veal in crock pot, along with carrots, onion and garlic. Add flour and stir so everything is coated. Add chicken broth, rosemary and tomatoes.
3. Cook, covered, on low for 7 hours.
4. Stir in the peas and cook for another 30 minutes.
5. Serve over hot rice.
