Wild West Skillet Beans |
Ingredients

* 4 slices bacon, chopped
* 16 oz can lima beans, drained
* 16 oz can kidney beans, drained
* 1/2 cup diced onion
* 1/2 cup diced celery
* 1/4 teaspoon garlic powder
* 1/2 cup ketchup
* 1/2 teaspoon Tabasco sauce

Directions

1. Brown bacon in a large skillet.
2. Add all remaining ingredients to skillet and stir to combine.
3. Heat in skillet over low heat for 30 minutes, stirring occasionally.

These beans taste just like you would imagine a plate of beans from a chuck wagon in the wild west. You can make this dish a bit more wild by adding a few extra drops of Tabasco sauce. You can also add more meat if you wish. Just brown up a little pork sausage with the bacon. Another way to bulk this dish up is to add some shredded cooked beef leftover from a pot roast.
Or... if you want to make this a vegetarian dish, replace the bacon with a sprinkle of smoked paprika. You get the good smoky flavor without the meat.
