Zucchini Cheese Patties |
Ingredients

*1 C of self rising flour
*1/8 tsp salt
*1/8 tsp pepper
*1/4 C of butter
*1/2 C of milk
*1/4 C cheddar cheese, grated
*1 small zucchini, peeled and grated

Directions

1. Preheat the oven to 425 degrees and spray a baking sheet lightly with cooking spray.
2. Mix the flour, salt and pepper together, add the butter and mix with a fork or pastry cutter to form into pea size balls.
3. Make a well in the center of the mixture and add the milk, cheese, and zucchini mixing with your hands until it forms soft dough.
4. Knead the dough on a floured surface then press out to 1 inch thick. Use a glass or biscuit cutter to cut out "patties."
5. Brush the patties with milk then bake on the prepared sheet for 10 minutes or until lightly browned, turning once.

These little zucchini patties make a great, healthy snack. And, it's an excellent way to use up the abundance of zucchini from your garden, or the neighbor's garden, without really letting the kids know what you're up to. If you want to hide zucchini in dishes, this is a pretty simple way to do it. You may want to increase the cheese just a bit.. Enjoy!
