Breakfast Frittata


* 8 eggs
* 1/4 chopped fresh parsly
* 1/4 cup chopped fresh herbs (optionally include cilantro, basil, chives, dill and/or mint)
* 1/2 cup feta cheese, crumbled
* 1/2 cup cooked brown rice, whole grain pasta or cooked potatos (great for left overs)
* olive oil


1. coat the bottom and sides of a 10\" cast iron skillet with olive oil and preheat oven to 375.
2. lightly press leftover rice, pasta or potatos into bottom of skillet and place on stove burner on medium high until it just starts to sizzle
3. whisk eggs in a bowl and add herbs and feta
4. after rice starts to sizzle, pour eggs on top.
5. reduce heat to medium and cook for 5 minutes on the stove
6. move the skillet to the oven and cook until puffed and browned on top, about another 15 minutes.
7. Serves 4


This recipe was put together with some leftovers when I had suprise guests, and it has been a family favorite since.

I thought you were not suppose to eggs with high cholesterol
