*8 oz cream cheese
*1 stick of butter at room temp
*1 tsp vanilla
*2 1/4c or 1 lb of powdered sugar
*1/2 c canned crushed pineapple drained very well
1. Beat cream cheese, butter, and vanilla with electric mixer until smooth.
2. Add sugar and beat until smooth.
3. Fold in pineapple.
This is a frosting you want to serve on a heavy cake, like a pound cake. If you really want to get fancy, make a pineapple pound cake, cut it into two layers, and spread some of the frosting in the middle, then on top. Yummy!
