Preheat oven to 350 degrees. Boil the white rice and drain. In a bowl, mix rice and taco seasoning well, covering all rice with seasoning. Add chicken and cheese and mix. Spoon mixture into tortillas and place in a 9X13 inch baking dish. Cover with enchilada sauce and sprinkle with cheese. A hint: if you put a bit of enchilada sauce on bottom of pan they won't stick! Bake for 20-30 minutes or until cheese is melted and chicken is warm.
Serve with sour cream, guacamole, peppers, etc. I personally love sour cream! Enjoy!
