Asparagus & Squash Chicken Platter |
Ingredients

* 8 boneless skinless chicken breasts
* 5 slices bacon, chopped
* 1/2 cup chicken broth
* 1 lb fresh asparagus spears, trimmed
* 1 yellow summer squash, cut into 1/2" pieces
* 4 green onions, cut into 2" pieces
* 1 lemon (optional)

Directions

1. Brown the chicken with the bacon (over medium-high heat), turning occasionally so all is nicely browned. Add broth, cover pan and cook another 7-10 minutes.
2. In a microwave safe dish, combine the asparagus with the squash and 2 tablespoons of water. Cover with saran wrap and poke a couple of holes to vent. Cook for 3 minutes, stir then cook another 2-3 minutes.
3. Place asparagus and squash on serving platter. Place chicken, bacon and green onions on top of vegetables. Sprinkle with salt and pepper to taste.

Sometimes I like a meal that's not so fussy, but really delishious and colorful. I love summer squash and asparagus together, both for the flavors and the color. You may not ordinarily think to put the two together, but it works. You might want to squeeze a little lemon juice over the veggies before you place the chicken on top. It seems to brighten all the flavors. Enjoy!
