Bake My Honey & Brown Sugar Carrots |
Ingredients

* 4 C baby carrots
* 2 TBSP brown sugar, packed
* 2 TBSP honey
* 2 TBSP fat-free margarine (may substitute whatever you normally cook with, butter included)

Directions

1. Preheat oven to 400 degrees.
2. Place brown sugar, honey and margarine in a small saucepan over low heat.
3. Heat stirring continuously until all ingredients have melted together and the consistency is smooth.
4. Place carrots in a baking dish.
5. Pour brown sugar mixture over the carrots.
6. Cover and bake for 55 minutes or until carrots are fork tender.

Any kind of candied carrots are a favorite in my house. What's not to love? Honey and brown sugar... yummy! I like this recipe because the carrots are baked instead of cooked in a pan on top of the stove, which eliminates a little of the constant stirring and pot-watching. This candied carrot dish is very easy to double or triple and would make an excellent Thanksgiving recipe for a busy Holiday.
