Baked Mushroom Swiss Cheese Snacks |
Ingredients

* 12 large button mushrooms, remove stems
* 12 small pieces of diced Swiss cheese
* 12 small pieces of diced cooked ham
* 12 pineapple chunks, fresh or canned
* olive oil
* 3/4 tsp chili powder
* 1/4 tsp salt

Directions
|
1. Brush outside of each mushroom evenly with the oil.
2. Set mushrooms open side up on baking sheet.
3. Fill each mushroom this way; first with a piece of ham, then pineapple, then cheese.
4. Put mushrooms in oven set at 400 degrees.
5. Let mushrooms cook in oven until they soften and the cheese is melted and getting golden brown.

My family likes stuffed mushrooms, but sometimes the recipes are too complicated to just throw together quickly. This recipe is so simple, we can have a bunch of stuffed mushrooms anytime we want. They make an excellent snack, but also are fancy enough to serve for appetizers at a larger gathering. Just make a couple batches so you have plenty to pass!
