1. Take a large bowl and add the flour, baking powder, sugar, pumpkin pie spice and salt. Mix well.
2. In another bowl add pumpkin puree, eggs and oil. Mix well.
3. Add wet ingredients to dry ingredients and mix well.
4. Fold in the cranberries.
5. Using two lightly greased loaf pans, transfer the mixture into each.
6. Preheat oven at 350F and bake for approximately 45 to 55 minutes or until golden brown.
7. Allow pan to cool for 5 minutes, then transfer onto wire rack to cool fully.
