Creamy Cucumber Mint Salad |
Ingredients

* 2 cucumbers, peeled and diced
* 3 cups plain vanilla yogurt
* 2 garlic cloves, minced
* 1 teaspoon dried mint (or 1 tablespoon fresh mint, chopped fine)

Directions

1. Combine all ingredients. Stir to mix well.
2. Serve after refrigerating about one hour.
3. Optional: You may keep this salad overnight, but I've noticed that cucumbers will tend to get a bit watery when kept in salad dressing of any sort for too long.

I like the refreshing flavors of cucumber and mint together in this creamy salad. The garlic adds a warm undertone of flavor that makes this salad perfect for any season.
If you are fortunate enough to have a garden, grow your own mint along with your cucumbers. Just be sure to contain your mint in clay pots buried in the soil. Mint spreads and will quickly take over any garden bed.
Tip: Be sure to choose very young, skinny, small cucumbers to avoid big seeds. I prefer regular cucumbers over English or seedless cucumbers because I believe the regular cucumbers have more flavor. But, that's your call. You can always scoop out the seeds if they seem too large.
