Crunchy Peanut Butter and Honey Muffins |
Ingredients

* 1 C all purpose flour
* 1 C quick oats
* 1 1/2 tsp baking powder
* 1/4 tsp salt
* 3/4 C skim milk
* 1/3 C honey
* 1/4 C canola oil
* 1 egg white, slightly beaten
* 1/3 C crunchy peanut butter

Directions

1. Heat the oven to 400 degrees.
2. Line muffin tin with paper muffin cups.
3. Sift the flour into a mixing bowl, add the oats to the flour and toss.
4. Sprinkle in the baking powder and salt and toss again to incorporate the ingredients together.
5. Pour the milk in a different bowl and add the honey, oil and egg white. Using a wooden spoon, stir well.
6. With a rubber spatula fold in the peanut butter until mixed in well.
7. Fill each liner 2/3 full of the batter.
8. Bake 18-20 minutes or until a toothpick inserted in each muffin comes out clean.

I think peanut butter is good, but crunchy peanut butter is better! I keep at least two or three jars in my kitchen at all times. I could live on peanut butter and honey sandwiches and I know my kids could too. So the combination of crunchy peanut butter and honey are a natural in muffins. You have to try these muffins. They are guaranteed to make your kids go nuts. Enjoy!
