Easy Elegant Salmon Casserole |
Ingredients

* 2 Tbsp butter
* 1/4 cup fine bread crumbs
* 1/3 cup fish stock (or chicken stock)
* 1/3 cup milk
* 1 cup cooked salmon, chopped
* 1/2 tsp parsley, chopped fine
* 2 eggs, lightly beaten

Directions

1. Preheat oven to 350 degrees, and butter a small casserole.
2. In saucepan, melt butter over low heat, then stir in bread crumbs and fish stock. Add remaining ingredients one at a time, slowly stirring constantly until creamy and hot. Remove from heat and pour into casserole.
3. Set casserole in roasting pan filled with hot water and put into preheated oven.
4. Bake for 20 to 25 minutes or until firm and eggs are completely set; remove and let sit at room temperature for 3 to 5 minutes before serving.
