Fresh Spinach Salad with Onion Mustard Dressing |
Ingredients

* 2 tsp. yellow onion, grated
* 1 tsp. salt
* 1/2 tsp. freshly ground pepper
* 2 TBSP Dijon mustard
* 1/2 C extra virgin olive oil
* 1/2 tsp. freshly ground lemon juice
* 1/2 lb. fresh spinach or greens of choice
* 6 slices bacon cut crosswise into 1/2 inch strips
* 6 to 8 button mushrooms, sliced
* 1/2 red onion, thinly sliced
* 3 hard-boiled eggs, peeled and chopped

Directions

1. Place the onion, salt, pepper, mustard and olive oil into a blender.
2. Blend until smooth about 2 minutes.
3. Add the oil and blend in short spurts until blended together.
4. Pour the dressing into a bowl.
5. Stir in the lemon juice.
6. Cover the bowl with plastic wrap and set to the side.
7. Prepare the spinach by immersing it a large amount of water.
8. Swish the leaves around so they will be well cleaned.
9. Drain well.
10. Repeat the procedure until the bottom of sink shows no signs of dirt when emptied.
11. Tear the spinach into bite size pieces.
12. Place in a large bowl and cover with a paper towel.
13. Place in the refrigerator until ready to use.
14. In a small saucepan cook the bacon 5 minutes or until crisp.
15. Drain the bacon well.
16. Take the spinach from the refrigerator.
17. Add the mushrooms, onions and eggs.
18. Mix together well.
19. Add the bacon and stir to incorporate.
20. Pour the dressing over the salad and serve.
