Garlic Zucchini Pasta Sauce with Pine Nuts |
Ingredients

* 1 C olive oil
* 3 garlic cloves, crushed
* 4 large zucchini, coarsely grated
* 1 tsp black pepper
* 1/3 C fresh basil leaves, shredded
* 1/3 C pine nuts
* 1/2 C Parmesan cheese, grated
* 1 (1 lb.) box of spaghetti, cooked to package directions

Directions

1. Heat the olive oil in a large pan over medium heat.
2. Stir in the garlic and zucchini when the oil is hot.
3. Cook 10 minutes or until the zucchini is soft.
4. Stir in the pepper and basil leaves and cook an additional 3 minutes.
5. Spoon the sauce over the cooked spaghetti.
6. Sprinkle the pine nuts and cheese evenly over the sauce before serving.

Getting away from tomato sauce and meat sauce for pasta is a good idea once in a while. It reminds us that there are a lot of so called "gravies" that are considered in Italian cooking to be desirable spooned over a variety of pastas. Simple vegetable, olive oil, and garlic sauces are very popular in the Italian countryside, because that's what's available. Experiment a little with different varieties of pasta sauces and surprise your family with some new "spaghetti" meals.
