Grilled Mini Pot Roast Packets |
Ingredients

* 1 lb. beef stew meat, cut into 1 inch pieces
* 4 green onions, chopped
* 2 Yukon gold potatoes, diced small
* 1 regular carrot, diced small
* 2 Tbsp Worcestershire sauce
* 2 Tbsp butter, melted
* 2 Tbsp water

Directions

1. Prepare the grill to medium-high heat.
2. Tear off 4 large sheets of heavy duty aluminum foil.
3. Divide the beef and all the vegetables evenly between the 4 sheets of foil; fold the sides up but leave unsealed for now.
4. Whisk together the Worcestershire sauce, butter, and water, then pour carefully into the contents of the packets.
5. Fold up the sides and tightly seal into a packet, leaving a little air space at the top.
6. Set on grill on indirect heat, close cover, and cook for 35 to 40 minutes, spinning packets around once or twice during the cooking time.
7. Cook until meat and vegetables are tender and cooked to your liking.
8. Remove and let rest for a few minutes then carefully open packets and serve. Serves 4.

Do you love pot roast but you just want four servings cooked simply? Perhaps you're camping out. Or maybe you don't want to lug out a big Dutch oven and heat up the kitchen. These little packets cook up fast and are every bit as tasty as your favorite bigger scale pot roast recipe.
You may wish to brown the beef before adding it to the packet. This will produce a browner gravy and a 'darker' flavor. Either way, the beef gets nice and tender. Watch the heat - make sure the foil is not sitting directly on the grill burners. Your best results will come from an indirect heat.
Of course, you can put these in the oven to cook. Just set oven on about 325 to 350 and put on rack in middle of oven. Bake for about 40 to 45 minutes or until the meat is tender and veggies are soft.
