Marinated Summer Garden Salad |
Ingredients

*2 Tbsp vinegar (any kind you like)
*2 Tbsp salad oil (olive or safflower work well)
*1/2 tsp sugar (more or less to taste)
*1/2 tsp salt
*1/4 tsp celery seeds
*1 cucumber, peeled, halved and sliced thin
*1 sweet onion, sliced thin
*1 C cherry tomatoes, halved
*1 green bell pepper, cut into strips

Directions

1. Whisk the vinegar, oil, sugar, salt and celery seed together well.
2. Stir in the cucumbers, onions, tomatoes and bell pepper.
3. Cover and chill at least 3 hours before serving (being sure to stir occasionally.)

I have a couple cucumber salad recipes which are marinated in an oil/vinegar mix and have found that whenever I make any of these salads, the key is fresh fresh fresh cucumbers! If your cucumbers don't have that "cucumber smell" when you cut into them, you may as well just use them in a green salad covered in ranch style of Italian dressing.
Also, I don't bother buying seedless cucumbers because they don't have as much flavor as regular cucumbers. If the seeds seem a bit large, just scoop them out of the cucumber before proceeding with the salad.
