1. Blend beer, crushed peppercorns and garlic together.
2.Place steaks in a baking dish and cover with beer/bourbon blend.
3.Place aluminum foil over the top and marinate for several hours. (Freshly chopped garlic can substitute powder.)
4.Once marinated, heat olive oil in a large frying pan on medium-high heat until nearly smoking.
5. Add steaks.
6. Sear both sides, turn burner to medium and sauté until cooked to desired level of doneness. 7. In a small sauté pan, heat onions and butter together.
8. Pour over steaks and serve.
