Rise and Shine Breakfast Hash |
Ingredients

* 1/4 C (1/2 stick) butter or margarine
* 5 medium boiling potatoes, cooked, peeled and cut into 1 in cubes
* 1/2 tsp seasoned salt
* Salt and pepper to taste
* 2 (4 oz.) pkgs sliced smoked ham, cut into 1/2 in wide strips
* 4 eggs beaten with 1 TBSP milk
* 2 TBSP chopped fresh parsley

Directions

1. Place eggs in a large bowl, add milk and beat slightly. Set aside.
2. Place butter in a large skillet over medium heat and melt.
3. Put the potatoes in the skillet and sprinkle with season salt and salt and pepper.
4. Cook potatoes 10 to 15 minutes or until slightly browned.
5. Reduce heat to low.
6. Add in the ham strips and cook about 5 minutes.
7. Pour egg mixture over the top.
8. Cook turning with a spatula until the eggs are completely cooked to your liking 4 - 5 minutes.
9. Top with parsley and serve.

My Dad grew up in a logging camp where the men ate their big meal in the morning. Whenever my Dad cooked breakfast for us kids at home, I had the feeling we were supposed to go out and do some logging after we ate! This recipe is a logging camp breakfast at it's finest. Enjoy!
