Seafood Cocktail Soup |
Ingredients

* 1 tablespoon olive oil
* 1 yellow bell pepper, chopped
* 1 onion, chopped
* 2 cloves garlic, minced
* 14 1/2 oz can stewed tomatoes
* 1 cup spicy vegetable juice
* 1/2 cup water
* 1/4 teaspoon salt
* 1 lb cod fillets (or other firm, white fish), cut into bite sized pieces
* 1/2 lb medium shrimp, shelled & deveined

Directions

1. Saute the bell pepper and onion in hot oil in a large soup pot for about 6 or 7 minutes or until lightly browned, stir often.
2. Add the garlic and cook for another minute stirring the whole time.
3. Add the tomatoes, vegetable juice, water and salt, stir well. Cover and bring to a boil.
4. Lower heat and let simmer slowly for about 10 minutes.
5. Add the seafood, cover and simmer another 5 to 6 minutes or until fish flakes and shrimp is pink.

Consider the flavors... spicy tomato, garlic, and onion. Now, simmer those flavors together, add your shrimp and fish, and you have all those great flavors in a soup! I recommend taking a little horseradish, mixing it in with some sour cream, and placing a dollop on top of each bowl. Your Shrimp Cocktail illusion is now complete!
