Summer Berry Melon Bowls |
Ingredients

* 1 cantaloupe, halved
* 1 small watermelon, halved
* 1 cup blueberries
* 1 cup strawberries, sliced
* 2 kiwis, peeled and sliced
* 1 lemon, juiced
* 1 cup honey
* 1/8 tsp salt
* fresh mint leaves

Directions

1. Cut both the cantaloupe and watermelon in half, clean out the seeds and pulp, and scoop out the good stuff with a melon-baller; put melon balls in large bowl and set cantaloupe and watermelon 'bowls' aside. (hint, slice tiny bit off bottom of cantaloupe and watermelon bowls to help them stand up straight if necessary)
2. Prepare remaining fruit and add to bowl with melon balls. Drizzle lemon juice and honey over all the fruit, sprinkle with salt, and toss gently to combine.
3. Spoon fruit mixture into melon bowls, cover with plastic food wrap, and set in refrigerator to chill. Serve with a sprig of fresh mint on each bowl. Makes 4 little fruit bowls.

This is the sort of fruit salad that appeals to everyone, healthy eaters and sweet eaters alike. You don't need to add a lot of sugar and whipped cream to make a fruit salad delicious, and this recipe proves it.
What's the trick? Use a good variety of fresh fruit, use fresh lemon, and don't forget the salt! Yes, salt. Salt actually does bring out the 'sweet' in fruit, especially when it sits for awhile before serving.
