1. Whisk the sugar and water together in a saucepan over medium heat.
2. Bring to a boil and cook stirring constantly until the sugar dissolves.
3. Chill the mixture 10 minutes in the refrigerator then stir in the lime zest, lime juice, and ginger.
4. Place the melon chunks into a serving bowl, pour in the syrup and toss to coat.
