Swiss Apple Chicken Bake |
Ingredients

* 3 large tart apples, cored and sliced into 8 wedges each
* 2 large sweet onions, sliced into 8 wedges each
* 2 tablespoons butter
* 6 boneless skinless chicken breast halves
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 3/4 cup shredded Swiss cheese
* 1/4 cup grated Parmesan cheese
* 1/4 cup bread crumbs
* 1/2 teaspoon minced thyme
* 2 tablespoons apple juice

Directions

1. Preheat oven to 350. Spray baking dish with non-stick cooking spray.
2. Heat butter in a large skillet and saute apples and onions together until onions are translucent, about 5 or 6 minutes. Put in 9x13 baking dish.
3. Season chicken with salt and pepper than place on top of apples-onions mix.
4. Sprinkle with Swiss cheese, Parmesan cheese, bread crumbs and thyme. Drizzle apple juice over everything then bake for about 45 minutes or until chicken is cooked through thoroughly (no longer pink.)

Whoever first cooked tart apples with sweet onions was a genius! This flavor combination works very well with so many things. Chicken, pork, even beef. There are endless ways to dress up lots of dishes with apples and onions cooked together.
The added Swiss and Parmesan cheese is a real nice touch with this dish. Because of the cheese and the apples, this dish very definitely qualifies as Kid-Friendly!
