Traditional Herbed Chicken Stew - Crock Pot |
Ingredients

* 2 lb. chicken breast, boneless, skinless and cut in cubes
* 2 (14.5 oz) cans chicken broth
* 3 lg. potatoes, peeled and cubed
* 1 lg. onion, chopped
* 1 stalk celery, chopped
* 1 lg. carrot, chopped
* 1 tsp. paprika
* 1/2 tsp. pepper
* 1/2 tsp. sage
* 1/2 tsp. thyme
* 1 (6 oz) can tomato paste
* 1/4 C cold water
* 3 tbsp cornstarch

Directions

1. Place the chicken and the broth into the slow cooker.
2. Add the onion, potatoes, celery, carrots, paprika, pepper, sage and thyme.
3. Stir in the tomato paste until well combined.
4. Cook covered for 5 hours on HIGH.
5. In a mixing bowl put the cold water and cornstarch and whisk until very smooth.
6. Place the cornstarch mixture into the slow cooker and blend.
7. Continue cooking for 60 minutes covered or until vegetables are fork tender.

The ingredients are simple, but the results are awesome! I have to credit the sage and thyme for the incredible aroma of this homemade chicken stew. If Grandma's coming for dinner, this one's for her!
