Tri-Color Bean and Veggie Salad

Ingredients

* 1 (14 oz.) can of cannelloni beans
* 1 green pepper, chopped
* 2/3 C cucumber, chopped
* 2/3 C red onion, chopped
* 1 large tomato, chopped
* 2 tbsp lemon juice
* 1 tbsp olive oil
* 1/8 tsp cumin
* 1/2 tsp salt
* 1/4 tsp pepper
* Lettuce leaves

Directions

1. In a bowl combine the beans, green pepper, cucumber, onion, and tomato.
2. Pour in the lemon juice and oil tossing gently to coat.
3. Season the mixture with the cumin, salt and pepper stirring to blend in well.
4. Cover the bowl and place it in the refrigerator to chill at least 1 hour.
5. Lay the lettuce leaves on plates and top with the bean mixture.

Story

When everything is nice and cold and crunchy, you just can't go wrong. This salad is very colorful, yes, but very delicious, as well. The cumin and cucumber are an excellent combination of flavors. Well, really, it all works together very well and is a quick "anytime" salad.
