1. Preheat oven to 325F.
2. In a bowl combine raisins, pecans, brown sugar and cinnamon.
3. Wash and core each apple and place in a baking dish prepared with nonstick spray.
4. Divide the brown sugar/raisin mixture into four parts and fill each apple with the mixture.
5. Bake approximately 40 minutes or until tender.

When apple season is in full swing, you'll be wanting to put in a supply of Granny Smith apples just for this dessert. I've seen many baked apple recipes, but none so scrumptious as this one. The winning ingredient is the pecans, of course. Adding the crunch with the sweet is a winner. But, delicious as these apples are as is, you'll appreciate a little scoop of low-fat frozen yogurt or ice cream to enjoy the wonderful cold with hot combination. Or serve with a little granola sprinkled on top for a healthier option.
