Baked Egg and Cheese Combo |
Ingredients

* 10 eggs, beaten
* 1 lb. Monterey Jack cheese, grated
* 2 C cottage cheese
* 1/2 C (1 stick) butter, melted
* 1/2 C all purpose flour
* 1 tsp. baking powder
* 1/2 tsp. salt
* 2 (4 oz.) cans diced, green chilies, drained.

Directions

1. In a large mixing bowl combine the eggs, Monterey Jack cheese, cottage cheese and melted butter.
2. In a separate bowl mix together the flour, baking powder and salt.
3. Add dry ingredients to egg mixture.
4. Stir to mix well making sure all the ingredients are moist.
5. Gently fold in the chilies.
6. Preheat oven to 350 degrees.
7. Slightly butter a large baking dish on the bottom and up the sides.
8. Place mixture into the pan.
9. Cook about 30 minutes or until brown and center is firm.
