Balsamic Garlic Marinated Chicken

Ingredients

*1 cup chicken broth
*2/3 cup balsamic vinegar
*4 large cloves of garlic, minced
*1/4 cup sugar
*1/2 tsp dried thyme
*1/2 tsp salt
*1/4 tsp pepper

*4 skinless and boneless chicken breasts
*1 tbsp extra virgin olive oil
*1 tbsp butter

Directions

1. Place the first 7 ingredients into a glass bowl and whisk together to make marinade.
2. Add the chicken to the bowl, turning to coat well and marinade for 15 minutes turning once.
3. Melt the butter and oil together in a skillet; remove chicken from marinade (reserving marinade) and add the chicken to the skillet, cooking 4 minutes each side.
4. Pour the marinade over the chicken and bring to a boil, reduce the heat to low and cook 10 minutes longer.
5. Remove the chicken and bring the marinade back to a boil, cooking 10 minutes or until it is the consistency of syrup. Drizzle over chicken breasts when served.

Story

Chicken breasts can get pretty boring when you serve them over and over again. This marinaded chicken recipe is easy to make and tastes great - not boring! Having that little marinade "syrup" to drizzle over the chicken adds a nice touch.

Be sure you bring the marinade to a good boil and cook it for the full 10 minutes to form the syrup. It had raw chicken in it, so you have to cook it this way so there's nothing raw left.
