Beefy Mushroom Rice Casserole


* 1 C long grain rice, uncooked
* 1 (11.5 oz.) can onion soup
* 1 (11 oz.) can beef broth
* 1 (16 oz.) can mushrooms, (stems and pieces) drained
* 1 stick of butter


1. Lightly spray the bottom only of a casserole dish.
2. Set the oven to heat to 325 degrees.
3. Pour the rice into the prepared casserole dish.
4. Stir in the onion soup and broth.
5. Fold the mushrooms into the mixture.
6. Break up the stick of butter and scatter in the middle of the casserole.
7. Cover the casserole tightly with foil.
8. Place in the oven and bake 50 to 60 minutes.


Even though this is a very easy casserole, it looks and tastes like it took a lot of effort. It must be the butter... butter makes everything more elegant. This is a very rich side dish, so you may want to serve it sparingly! Enjoy!
