* 2 C of frozen cheese-filled tortellini
* 1 1/2 C cooked ham, cut into small strips
* 1 C of cheddar cheese, cut into cubes
* 1 C broccoli florets, cut bite size
* 1 C of yellow squash, cut bite size (or zucchini)
* 1/2 C Italian salad dressing
* 1 Tbsp Parmesan cheese, grated
* Lettuce
* 4 tomatoes, cut up for salad as you like

1. Cook the tortellini following package directions, dump into a colander and drain, then put tortellini under cold running water, rinse, and drain very well.
2. Place the tortellini, ham, cheddar cheese cubes, broccoli, and yellow squash into a big bowl.
3. In a separate bowl, whisk together the dressing and Parmesan cheese, then pour over the tortellini salad mixture in bowl and toss.
4. To quickly chill salad for serving, place bowl in freezer for a few minutes; 5 or 6 should do it.
5. To serve, put lettuce on salad plates or in salad bowls, then spoon a portion of tortellini salad over the lettuce and top with tomato pieces.

This salad is definitely a filling meal that both grown ups and kids like. Throwing it into the freezer for a few minutes gives it a nice chill, but if everything comes right out of the refrigerator before being cut up, you might not need to 'flash chill' it at all.
I whisk up just a tad more of the salad dressing so I have it available to drizzle over the tomatoes on top of the salad when serving.
