*1 lb. lean ground beef (or shredded beef)
*1 (28 oz.) can barbecue flavored baked beans
*2 C frozen whole kernel corn
*4 1/2 tsp Worcestershire sauce
*1 C cheddar cheese, shredded
*12 (8 in.) flour tortillas
*3 C lettuce, shredded
*1 1/2 C tomatoes, chopped
*3/4 C sour cream
1. Cook the beef over medium heat, stirring often for 8 to 10 minutes, then drain well.
2. Return the beef to the skillet along with the baked beans, corn and Worcestershire sauce.
3. Simmer on low for 5 minutes then sprinkle in the cheese and cook until melted.
4. Fill each tortilla with the beef mixture, lettuce, tomatoes, and sour cream and roll to close.
I made this the first time with ground beef but decided I liked it with shredded beef, too. And, since we often have leftover roast beef in the house, it's the perfect use-it-up recipe. You can spice it up as much or as little as you wish. It's a very kid-friendly recipe that you can easily tweak for the adults.
