Chunky Zucchini & Great Northern Bean Spaghetti |
Ingredients

* 6 oz. spaghetti noodles, uncooked
* 2 medium sized zucchini, washed and diced
* 2 Tbsp. cooking oil
* 1/3 cup water
* 1 Tbsp. tomato paste
* 1/4 tsp. sea salt or kosher salt
* 1/8 tsp. fresh ground black pepper
* 1 (15 oz) can Great Northern Beans, rinsed well and drained
* 1 (14 oz) can diced tomatoes with Italian seasoning
* 2 oz. feta cheese, crumbled, for topping

Directions

1) Cook spaghetti noodles following package directions.
2) While it's cooking, start the sauce. Take a large heavy skillet and put it over medium high heat.
3) Add the zucchini and cooking oil, stirring until zucchini starts to brown, about 5 to 7 minutes.
4) Add the remaining ingredients (except feta cheese) and stir to combine. Cover skillet, turn heat down to low, and simmer for 5 minutes.
5) Serve by dishing spaghetti noodles onto plates and adding the sauce, then topping with some crumbled feta cheese.

This is another great way to use up zucchini! Kids hardly know what it is when it's covered in tomato sauce. The Great Northern Beans add a lot of nice texture and are full of protein and other nutrients, too.
