Coddle Dad Tacos
Ingredients
* 3 TBSP mayonnaise
* Juice and zest from 1 lime
* 3 C coleslaw mix
* 2 complete scallions, chopped
* 2 TBSP fresh cilantro, chopped
* Salt and pepper to taste
* 3 TBSP olive oil
* 1 lb. cod fillets, cut into 6 equal portions
* 1 tsp. chili powder
* 1/4 C all-purpose flour
* 12 corn tortillas, heated
Directions
1. Place the mayonnaise in a large mixing bowl.
2. Add the lime juice and zest and mix well.
3. Fold in the slaw mix, scallions and cilantro.
4. Add salt and pepper to taste and mix well to combine.
5. Allow slaw to stand while preparing the fish.
6. Place the olive oil in a large skillet over medium heat.
7. Allow the oil to heat but do not let it smoke.
8. Sprinkle the fillets with the chili powder.
9. Place the flour in a shallow bowl.
10. Coat both sides of the fish with the flour.
11. Cook the fish in the skillet for 5 minutes turning once during cooking time.
12. The fillets should be a light brown on both sides.
13. Warm the tortillas in the microwave on a paper towel for about 10 seconds.
14. Place 2 tortillas flat and slightly overlapping each other.
15. Break a piece of the fish over the tortillas.
16. Top with the slaw.
17. Grasp the edge of the tortillas and roll up.
