Cool Summer Garden Soup


*3 C of tomato juice
*1 onion, finely chopped
*3 tomatoes, chopped
*1 green bell pepper, diced
*1 cucumber, diced
*2 cloves garlic, minced
*2 tbsp olive oil
*2 tbsp lemon juice
*2 tbsp red wine vinegar
*1 tsp fresh basil, chopped
*1 tsp tarragon
*1/4 tsp cumin
*1/4 tsp cayenne pepper
*Hot sauce to taste


1. Place all the ingredients into a large glass bowl stirring to combine well.
2. Remove one-third of the mixture and place into the blender, blending until smooth.
3. Pour the blended soup back into the bowl, stir to combine.
4. Cover and refrigerate at least 2 hours.
5. Serve cold in soup bowls. Top with a dollop of sour cream if desired.


When the garden is ripe, or the farmers markets are bursting at the seams, stock up on all the fresh ingredients you can to make this wonderfully cooling soup. Enjoy!
