*3 C of tomato juice
*1 onion, finely chopped
*3 tomatoes, chopped
*1 green bell pepper, diced
*1 cucumber, diced
*2 cloves garlic, minced
*2 tbsp olive oil
*2 tbsp lemon juice
*2 tbsp red wine vinegar
*1 tsp fresh basil, chopped
*1 tsp tarragon
*1/4 tsp cumin
*1/4 tsp cayenne pepper
*Hot sauce to taste

1. Place all the ingredients into a large glass bowl stirring to combine well.
2. Remove one-third of the mixture and place into the blender, blending until smooth.
3. Pour the blended soup back into the bowl, stir to combine.
4. Cover and refrigerate at least 2 hours.
5. Serve cold in soup bowls. Top with a dollop of sour cream if desired.
