Cranberry & Mixed Fruit Jello


*2 small pkgs. cherry Jell-o
*2 C of boiling water
*1 (12 oz.) pkg. fresh cranberries
*1 apple, peeled, cored and chopped
*1 orange, peeled, seeded and chopped
*1 (1 in.) piece of orange peel
*1 (20 oz.) can crushed unsweetened pineapple with juice


1. Stir the gelatin and water until the gelatin has dissolved.
2. Fold in the cranberries, apples, oranges, orange peel and pineapple with juice.
3. Cool then place in the blender and blend until chopped.
4.Transfer to a 13X9 pan and refrigerate at least 3 hours or until set.


Scoop this into bowls and top with a dollop of whipped cream topping for a yummy and nutritious dessert.

Don't blend the mixture too long in the blender. You want some nice chunks and you don't want the apples to get mushy or watery. Just a few turns with the blender should do.
