Chicken & Veggie Chowder - Crock Pot

(Chicken & Veggie Chowder)

Ingredients

* 1 lb boneless, skinless chicken breasts, cut into pieces
* 1 can (10 3/4 oz) cream of potato soup
* 1 can (14 1/2 oz) chicken broth
* 1 package (10 oz) frozen broccoli cuts
* 1 cup sliced carrots
* 1 can (4 1/2 oz) mushrooms, drained
* 1/2 cup chopped onion
* 1/2 to 1 cup whole kernel corn (can use frozen)
* 2 cloves garlic, minced
* 1/2 teaspoon dried thyme leaves

* 1/3 cup half and half

Directions

1. Put everything, except half and half, in crock pot. Mix well.
2. Cook, covered, on low for 6-7 hours.
3. Add half and half, stir well. Cook, covered, another 15-20 minutes on high.

Story

If you like a real corn chowder, you can add more corn to this recipe. The half and half added at the end gives it the creamy style you expect from a real slow cooked chowder.
